Vinification:
Selection in the vineyard, hand-harvesting, gentle processing, multiple perforations of the must cake per day, maceration for 36 days, no pressing, but only free-run wine.
Expansion:
12 months of natural sedimentation in large wooden barrels, followed by 36 months in small oak barrels,
then 24 months of maturation in large wooden barrels, and 12 months of bottle aging.
Wine description:
Cedarwood, cranberries, dark chocolate with chili, dried figs
