hand picked selected grapes, 9 months maceration in used oak, matured on fine yeasts for 14 months
Atimo gives a new meaning to the ‘low’ in low-intervention wines, as winemaker Filip Koletnik believes that the grape itself contains everything needed to create the wine, i.e. no cultured yeast, no fining or filtration, no temperature control and no added sulphur.
